150g plain flour
1/4 teaspoon bicarbonate of soda
75g lard at room temp or oil
80g soft brown sugar 1
egg yolk to glaze.
Preheat oven to 200 oc
Grease tray ready
Sift flour and soda in bowl and make a well in the middle.
Add lard sugar egg and knead to a smooth dough. Do not over mix.
Roll into balls and press each piece of dough add a peanut on top if desired.
Glaze all over with egg yolk and bake until golden 15 mins.
Leave cookies to cool as warm cookies will be soft.
* If dough too sticky put mixture in the fridge for 20 mins.
