Home made pasta

 500 grams Tipo 00 flour

5 eggs (or 10 egg yolks)

Or change proportions i.e. 1 egg for every 100 gram of flour (or 2 egg yolks)

1.  Put flour onto something – a bowl or work surface

2.  Make a small dip in the middle

3.  Crack eggs into it

4.  Knead it well

5.  Wrap in plastic bag or clingfilm and rest it for half an hour or more

6.  Make it into pasta shapes or use a pasta machine to roll it out

Cook the pasta
